Lionheads’ Summer Zucchini Noodles

Our neighbours were kind enough to share with us their first harvest of zucchinis. We also have basil growing. I thought what could I make with these two ingredients on one of these hot summer days?  I wanted to have something healthy, juicy and flavourful and this is what I came up with. This raw meal is the real deal:)

Serves:  2-3     Prep Time: 15-30 minutes

Vegan, Gluten-free, Soy-free

Ingredients:

2 large zucchinis, cut julienne (like fettucine-style noodles)

4 Roma tomatoes, chopped into small cubes (1cm)

½ red onion, chopped

1.5 cups fresh basil, chopped

8 green olives, sliced

3 tsp capers

¼ cup extra virgin olive oil

3 tsp lemon juice

1.5 cups toasted walnuts

Salt and pepper to taste

Instructions:

Simply mix all of the ingredients together, except for the walnuts. Let sit for about 15 minutes for the juices to soak into the zucchini. Add the walnuts, mix well, and serve.
